Harvested by hand September 28, 2019 in by Cyclic team, sorted, crushed by foot and macerated 12 days on skins and stems at Cyclic in La Sagrera, Barcelona only doing punch downs every other day. Gently pressed by foot in our mash tun (used in beer making) before finishing fermentation in stainless steel. Bottled by hand November 21, 2019.
